You can be ‘Gluten Free’ and still have Pizza!

When I first started a grain free diet, one of the things I missed the most was pizza. The smell of pizza cooking has got to be one of the best smells in the world! I have tried many different grain free pizza dough recipes but I have found that this one is the quickest, easiest and tastes the most like ‘normal’ pizza. The dough is easy to work with, unlike a lot of other recipes I have tried and it holds it’s shape when you roll it out. It also doesn’t crumble under the toppings like so many others, this crust is ‘bready’ and crispy around the edges.

Buckwheat: Grain or Seed?

Buckwheat is actually a SEED, although the name is misleading. It is a fruit seed that is closely related to rhubarb and sorrel. This makes it suitable for people who are sensitive to wheat or other grains that contain gluten proteins. Buckwheat is a good source of fiber, rich in minerals such as iron and magnesium and filled with antioxidants. The taste of buckwheat flour is similar to wholemeal flour, making it a great substitute.

Suitable for Dairy Free?

While this recipe uses Greek yogurt, you can easily swap it out for coconut, soy or any other plant based yogurt. The consistency of the dough may vary when using different dairy free yogurts. Greek yogurt is very thick, so using plant based alternatives may have a higher water content and may make the dough more sticky. Try adding a little less yogurt than the recipe requires and then add more as needed.

Adding Your Toppings

This is the best bit! I like to chop everything up and then get the kids to help. They love making their own special pizzas, and because they made it themselves, they are more likely to eat it!

Sauces: (Bonus Recipe!)

I like to make my own pizza sauce by putting the following ingredients into a blender and mixing until smooth. The ingredients are:

One Can of Tomatoes
1 tbs Tomato Paste
2 Garlic cloves
Handful of herbs (basil, oregano, rosemary or thyme)
Dash of Olive Oil

Topping Ideas:

Mushrooms
Capsicum
Zucchini
Onion
Ham
Bacon

Don’t Forget the Herbs!

Oregano
Basil
Thyme
Rosemary

Cheese On Top

Lots of different cheeses work really well on any pizza but if you’re dairy free or vegan, be sure to use vegan cheese or omit the cheese all together. it’s still delicious!

Things you will need:

Measuring Cups
Silicone Baking Mat
Mixing bowl
Pizza Tray
Chopping Board
Knife
Rolling Pin

Gluten Free Buckwheat Pizza Dough Recipe

Ingredients:

2 Cups Buckwheat flour (300g)
3/4 Cup Plain Greek Yogurt (160g)
1 tsp Baking Powder
2 tbsp Olive Oil
1 tbsp Water (if needed)
Pinch of Salt

Method:

Pre-heat the oven to 220C (430F)
Grease oven pizza tray
Place buckwheat, yogurt, baking powder, oil and salt into a bowl and combine
It should start to resemble a dough but if it is too dry, add 1 tbsp of water
Use your hands to bring mixture together into a dough

Place dough onto a floured board or silicon mat
Knead dough until smooth and roll into a ball
Roll out into a sausage shape and divide into thirds
Use rolling pin to flatten out to 1cm thick, round shape Place onto pizza tray and bake for 5mins or until slightly golden around the edges
Add your choice of toppings Bake for 15-20mins or until golden brown on top
